In seafood processing:used as a water retention agent. 

In Dairy and Cheese:used as stabilize, emulsifier,antioxidant, chelating agent, buffer, ant-oxidant, flavoring agent.

In beverage is :used as color improver, quality improver, acid regulator, antioxidant.
